Domaine de Marcoux's Châteauneuf-du-Pape Blanc, crafted from less than one hectare of Roussanne and Bourboulenc, is their most limited cuvée. Upon arrival at the cellar, the grapes are softly pressed, and the juice is left to settle for several days before undergoing fermentation in stainless steel tanks. A minor portion of the Roussanne is barrel-aged, while the remainder matures in tanks on its fine lees. To maintain the wine's freshness, malolactic fermentation is intentionally avoided.
