The Montepulciano Riserva comes from a similar mix of parcels as the Cerasuolo, but from a separate harvest destined for the red. The grapes were destemmed and crushed, with spontaneous fermentation in stainless steel without temperature control. Maceration lasted 12 days, after which the skins were lightly pressed in a basket press. Aging at Praesidium is particular, playing with the push/pull of reduction and oxidation. The first 24 months of aging are in stainless steel; the second 24 months are in wood, 95% of which is large Slavonian oak cask and 5% is French tonneaux. 25% of the wood was new.
