Casa de Saima, nestled in Portugal's renowned Bairrada region, is dedicated to enriching the area's long-standing legacy of exquisite winemaking using indigenous grape varieties like Baga, Maria Gomes, and Bical. Graça Maria, the steward of these lands, employs both biodynamic and integrated methods to care for her vines, which range in age from 15 to 70 years old, including those in the esteemed Vinha da Corga vineyard. Her approach is focused on maintaining the balance and health of both soil and vines, ensuring the vineyard's sustainability for generations to come.
Regarding the winemaking process, the estate boasts vines planted in calcareous clay soil. Some of these are among the estate's oldest, contributing to the wine's distinctive character. The grapes are meticulously hand-trodden and fermented in traditional lagares, followed by maturation in large oak vats for a period of 10 to 12 months. This process results in wines that not only embody the essence of the Bairrada region but also reflect the rich history and dedication to environmental preservation at Casa de Saima.
