The "Ammonite" cuvee gets its name from the fossil types found in the area. Its grapes are grown in a vineyard perched above the Loire River, on a granite hillside. The grapes are picked by hand and gently pressed over four hours to extract their inherent richness. Natural fermentation occurs over 10 to 12 weeks in 600-liter, decades-old oak barrels, using only native yeasts.
Chateau Gaudrelle, established in 1537, is the estate's trademark. Alexandre Monmousseau, the current proprietor and vintner, has been managing the estate since it was acquired by his grandfather in 1931. He produces a variety of wines including sparkling, dry, and sweet varieties from Chenin Blanc grapes, alongside a sparkling rosé made from Grolleau and Cabernet Franc. He oversees 20 hectares of vineyards, with an average vine age of 35 years. Situated in the Loire Valley's core, between Tours and the historic town of Amboise, Château Gaudrelle offers a picturesque view of the scenic Loire River.
